In any event, here's a look at the menus I've been creating lately without bread, pasta, potatoes, fruit and sugar (though Splenda and sugar substitutes are allowed, or else how would I survive?!). See, they're not all just salads! And I have cheated once or twice, but for the most part I'm going strong.
Egg frittata with eggplant, squash, turkey lunch meat, broccoli and cheese
Tilapia in balsamic sauce with olives/onions, served with lentils and artichoke
Peanut butter/vanilla soy powder protein balls
Baked eggplant shells stuffed with mixed vegetables and ground turkey, topped with parmesan cheese
High-protein chili served with home-made baked “cheese crisps”

Can I get the chili/cheese chips recipe?? That looks amazing.
Wow, all of that food looks fantastic and makes me hungry again! Sure you don't want to go up for gourmet chef instead?
When I was borderline diabetic as a result of high dose steroids (worst drug ever) I had to manage my glucose only with what I ate... not easy. But here are some of my faves:
Tomates farcies filled with a mixture of spinach, ricotta, parmesan, and Lowry's salt (might be more, but I think that's it). You can make a variation on this recipe by slicing tomatoes and layering them in the bottom of a glass dish, put the filling on top, cover with more sliced tomatoes, and cover that with lots of cheese. You can substitute eggplant or mushrooms for tomatoes, and use any cheese you want. I also love slicing up tomatoes and goat cheese, dousing them in balsamic vinegar and a tiny bit of olive oil and eating that.
Slice and grill eggplants, make a creamy ricotta or goat cheese filling (or just slice up goat cheese), and then put that on the eggplant slices with whatever else you want (pesto, sundried tomatoes, etc).
Slice eggplants, put in tomato sauce, cover with cheese, bake. Instant eggplant parmesan!
And if you're looking for chicken recipes I have about a gazillion of those. From the looks of it though you don't need any of my ideas, you're cooking amazing food all on your own!
And if you have to have something sweet (although I found that totally eliminating sweets from my diet really cut down on my sweet tooth and sweet cravings in a couple of weeks) you should go with ice cream because all the fat makes your body process the sugar slower so you don't get as much of a glucose jump, and you get lots of calcium at the same time to maintain strong bones.
